Appam is a signature breakfast dish from Kerala, made from a fermented batter of rice and coconut milk. Its unique shape—thick and spongy in the center with thin, crisp edges—comes from being cooked in a small, curved pan called an appachatti. It is most traditionally paired with Ishtu (stew), a fragrant, creamy curry of coconut milk, ginger, green chilies, and vegetables (or meat/chicken).
